Card machines used on planes are offline, and don't transmit to verify the authorization. This is why there's generally a limit of a few hundred on onboard transactions. The transactions are processed on the ground. Airlines and other highly trusted merchants have what's called a floor limit: the bank guarantees to pay up to a certain level of transaction. The machine does download a list of blocked cards whenever it connects.
