I've taken this route many times, but never with such a short connection. Definitely get the boarding pass in CPH if you can - they will not always give you that in CPH claiming it is not possible.
The good news is that not many other flights arrive in that terminal at the time of the SK flight so generally the immigration lines are reasonable. Go to the transfer immigration right after the ordinary immigration. If you are quick out of the flight you can be lucky and have no line ahead of you. I've been so lucky a few times.
Should you miss out on the flight there are many others from PEK to HKG - one every 2nd hour or something with CA or Dragonair (they codeshare).
