I've transited through CDG before but have always remained in the terminal so this is my first time going through this process so please bear with me. If I am understanding this correctly, I will be able to exit the airport during my layover as long as I show my Landed Immigrant papers for Canada?

That is my understanding too, I am a citizen of India, holding a study permit for Canada.
