Done Hong Kong several times and interesting in that while waiting to board a UA flt last Sunday the GS coordinator was guarding the gate and she thought we out to try Shanghai as in her opinion (she was an PanAm person, me too (the original PanAm)) the place to go
Hmmm... let me try take a stab at the first one. peak summer season = June-August? I'm not a fan of those $1600 RT fares to PVG from the east coast.

Funny how I was born in Shanghai but have not been back much since I moved to NYC. Think I can still help as I'm fluent in Chinese and the local dialect. With regard to the venue and local tour, if we can estimate the number of registrations (I know it's hard!), I don't think it will be too big of a problem either.
