Can't help you with number 1, but for AMS-TLV it depends on LY's equipment on the day of your travel and the cabin of your choice. If you are seeking for J travel - look for a date when LY has a heavy on the route and the choice is a no brainer. For Y - go for the cheapest/convenient timing.

If it's a direct AMS-CAI - save your self some security grilling time and go direct.
