The video is flawed, actually. They show a 738 for assembly and a 73G for painting and delivery.
I noticed that. I wouldn't expect them to have a camera set up to capture the entire assembly process of a specific WN plane.
Even if it isn't quite accurate, I thought it was still a pretty cool video.
