Go off strip to Raku (Spring Mountain Rd / Charleston vicinity) for top notch Japanese food -- the specialty is robata or Japanese grill. This is reportedly the haunt of Paul Bartolotta and Joel Robuchon when they have some time off.

Better than anything on the strip at very NON strip prices. The Chef makes his own soya sauce (two types) and when the house made tofu is on the menu I highly recommend it. It is worth the trek.
