At airports that small, operating a food and beverage business and making even a small profit has got to be a challenge. All the traffic is origin/destination, and people know they can show up 45 minutes before departure, check a bag, sit around 10 minutes waiting for security to open, clear security, and board the plane. You don't have a lot of people waiting around the airport, which is what it takes for a restaurant or bar in the terminal to really be successful.
Other than the closed restaurant space, TYR really is one of the nicest small town airports I've ever seen.
I would hazard a guess that the bar/restaurant and the short-order counter in ACY is something of an exception to this. NK fliers are so used to getting abused by the airline that even the regulars show up early and get something to eat.
And a week later, it just hit me that the ACY-DTW flight is probably an attempt to create some gaming traffic between the cities.
