I really don't have any idea about HNL route. HNL-mainland US is hard to get award seats, so I didn't even bother searching for ICN-HNL at all. It's good to hear that you got at least one. KE will have additional 3 weekly to HNL starting this Sep with a bit odd schedule. Maybe you want to try them.
Let's say that I already (probably in May) have reached the 125K mile threshold on DL (thank you rollover). Should I just start banking my DL miles in a KE account to I can have access to their award inventory directly?

I don't think that's a good idea. Current DL/KE award mismatch may be something temporal stuff. It wasn't this bad even 2 years ago. I searched on KE website for many NWA/DL FTers here and they called using information that I gave, and it worked. KE's redemption rate is bad (70k or 80k on low season US-Asia), and no elite bonus at all. You can just get an award via one-stop on LAX, DFW or somewhere else.
