I would highly recommend La Pergola

It is a dining experience that is definitely worth trying at least once. I have been there many times. The food and service and atmosphere are all outstanding and worth the high price. There are few restaurants in the world that are more romantic and relaxing. The views of St. Peters and the city lights of Rome are spectacular. It is not out of line with a 3 Michelin star restaurant and I have eaten at others that were more pricey and less in terms of the total dining experience.

The owner/chef is Heinz Beck and is world renowned for his culinary skills and his cook books. He usually comes out and personally meets guests during dinner. I have eaten there dozens of times and have never been disappointed however be prepared that a meal of this caliber does not come cheaply.

Anything you order will be good. I would go with the Prix Fix menu and get the Grand Desert. Marcello the wine sommelier is also excellent and if you are inclined to pairing good wine with your meal he is an invaluable resource. If you are a lover of chesses then also splurge for the Italian cheese cart service. They will prepare an assortment of cheese from throughout Italy and you can eat as much as you desire of any particular one you like. They also have a “Water Menu” which shows the mineral/gas/salinity content of each of the various waters from the different regions of Italy or you can ask them to choose one based on your dinner /appetizer selection. This goes way beyond your typical with gas or without gas choice for water. I would book as far in advance as you can as it is a small venue and many people like myself have standing reservations which get priority. If you have problems getting a reservation contact me privately and I will assist you in getting one.
Good luck and enjoy yor trip to Italy.
