The chef/owners there are doing the first ever vegan dinner at the James Beard House in early November. I made a reservation and am eager to attend.

Some Asian countries can be particularly difficult. I've ran into the same things you have where the stocks are fish or chicken based or pork comes on a dish that's supposed to be vegetarian (just had this in Taipei).

I didn't find any similar problems in Turkey. You should find plenty to eat. Have fun.
