IME, it varies based on the hotel, and even varies based on the front desk agent who checks you out. Some check closely, some just remove $150, some remove taxes, some remove alcohol. There's no one single way it works unfortunately. You could charge $150 including tax & tips and gamble they will take everything off. And then if they won't, tell them you don't wanna check out afterall cuz you wanna grab a quick lunch first, then quickly spend your other ~$30-40 on lunch. ^
