I was told that there was nothing available for purchase ("run out of everything due to hungry passengers").
Last year: 3/5 Friday successive nights NTL-MEL with nothing to buy - I gave up and remaining weeks of my commute I bought from the terminal. "Sold out on the flight up."
I've yet to understand the LCC business model. Consider the opposite: with full service you are guaranteed that income - because you've already taken it in the ticket. No cost of cash handling .....
But I still don't get it.
