I would imagine that bottles of spirits would be closed, and as they CAN be used again, are stored in the bars and locked/sealed. Bottles of wine wont "keep" so have to be disposed of before landing.

In some airlines holding on to your glass for landing is a no-no as it could smash or become a missile in the event of something going awry.
