So I was finally able to get availability at a West Texas hotel for our trip. We are staying at the Thunderbird, which considers spring break a "holiday" and charges more for it.

I'm just hoping that the Paisano has some of their rooms open up on February 15th and I can cancel the Thunderbird one.
