in no particular order:
(1) breweries inside airport terminals
(2) Apple Store
(3) 1-hour dry cleaners
(4) supermarkets(very handy, but I've never seen them in the U.S.)
(5) batting cage
(6) restrooms with attendants (like CLT Airport)
(7) bicycle rental so I can get to my get faster (some airports let employees use them, so why not passengers? yeah, that'll never happen)
(8) fortune teller or palm reader booth
(9) tattoo shop
(10) more valet parking
(11) roller coasters that take you from terminal to terminal (yeah, sure)
(12) full service banks
(13) IKEA
(14) Hooters Restaurants
(15) silent waiting rooms(no talking, no cell phone, no sound whatsoever)

In an airport operation, the storefront space could be kept fairly small. And the offerings could always include at least one vegetarian option, something not always easy to find at airport food outlets.

Barber - definitely, though I've been mocked for bringing it up elsewhere.
We gents don't make appointments to get haircuts, we just realise one day it's getting untidy. When better to get it cut than when you're having a forced wait?
Same with inexpensive work clothing - office trousers, shirts,everyday underwear & socks (not fancy ones), cheap & light raincoats - these are the things you get halfway through a business trip and realise you forgot to bring, or didn't have time to shop, or have torn/spilt on etc.
UK airports are well supplied with pharmacy chain Boots, so no complaints there but would be good to see it internationally.
the idea that air travellers are only interested in luxury goods is at least 25 years out of date. Get with the times, airport designers.

I went to unisex salon last month at MSP. Good enough haircut perhaps but over inflated airport prices. What a rip off

Laundromat. Would save a lot of time on work trips when I take trips to multiple locations and don't feel like hunting for laundromat sort packing heavily.
