On a day-to-day basis (i.e. not traveling), I use my phone for - in approximate order of frequency:

*my personal calendar (work and personal appointments)
*mapping (Google maps)
*clock and alarm clock
*listening to audiobooks (Audible app)
*various games (Scrabble, Boggle, sudoku)
*listening to music (iTunes)
*texting
*password vault
*internet browser (with available VPN service)
*paying with gift cards (Starbucks, Tim Hortons)
*contact information (phone, email, and addresses for friends/work/family)
*telephone
*email
*membership bonus cards (eg Air Miles, etc)
*camera and photo album
*local weather app
*various work-related apps (unit conversion, calculator, PDF files, reference texts, tracking hours/mileage)
*various retail apps to find their nearest location
*apps to find the nearest parking lots to a given location

When traveling, I also use various travel apps (Flight Track, Trip Advisor, Hertz, specific hotels) and occasionally translation or phrasebook apps, where appropriate. I use the compass more when I'm traveling. I also add in either apps or PDF files on the local transit systems.

If I'm traveling far, I also use Time Tape (to keep track of relative times in chosen locations), Daylight and Sunrise Sunset (to know sunrise/set times), and SkyView (to look at the stars).

I have other apps on there for general fun and reference, but rarely use them (xe.com for currency exchange, the periodic table, the bible, Garage Band, slo mo camera) - they were free and so I keep them on there because you never know when I'll need them again.

I edited to add my personalized lock screen (since the OP made it sound like only those who spend their time on texting and Facebook like to personalize their screen. I'm started several conversations spurred by this lock screen:

On a typical day:
  • Alarm clock to wake me up.
  • Radio app to listen to while getting ready.
  • Weather app/widget to decide if I'm cycling or not.
  • Train app/widget to see if I should just stay home for a few extra minutes...
  • Video/TV (iPlayer, usually) app to watch something on the train.
  • Music to listen to on the train, and on the Tube if I can't be bothered cycling.
  • Chrome browser and the Google App for everyday use.
  • Your standard set of social media apps for everyday use.
  • Gmail for personal email alerts, Maildroid for work email while out and about.
  • Killer Sudoku app as a timekiller.
  • Coffee shop loyalty/payment apps.
  • Evernote app/widget to remind myself to pick up milk or whatever at the station on the way home.
  • SMS app for, well, SMS.
  • WhatsApp to keep in touch with groups of friends, send pictures and communicate while abroad.
  • Skype app for video chat to MrsStut when away.
  • Airline apps for electronic boarding passes (BA, SAS, easyJet, Ryanair, Norwegian).
  • TripIt app to see where I'm meant to be.
  • CityMaps2Go for when I'm in a country without free data roaming for my network.
  • Calendar, mostly for alerts.
  • Google Authenticator, as I have 2-factor authentication on my Google Apps.
  • Ocado for when I remember to add something to this week's shopping.
  • Google Photos to upload snaps and what have you.
  • Camera to take the aforementioned snaps.
  • Wifi remote control for when I'm just too lazy to get up.
  • Oh, and that telephone app thing. It comes in handy, too...

These would be the ones I use more than once a week. I've a bunch of others too...

My phone turns the lights on when I approach the premises after sundown, unlocks the door (see my review of the August Smart Lock in Frequent Business Traveler, where I'm ed.dir.), opens and closes the shades, controls music (Sonos), wakes me up, and keeps me connected with friends through various apps.

Many of the above, but the three I use extensively not mentioned (I think) above are:
Sonos music system
Citymapper for buses and undergrounds

Keep in mind, by being active on an internet forum this population has already self-selected for being tech-saavy.

I suspect few people my age use their phone's capability anywhere near the level that I do.

I used to do all kinds of crazy things with my phone back when I had an Android. I rooted it, and would load CyanogenMod builds all the time. I'd do things like running web/FTP servers just because I could. I'd use it as a bluetooth keyboard and mouse for computers just because I could (also great for pranks on officemates). Then over time I pretty much stopped, and switched to iPhone when I realized that 90% of my usage is basic web browsing, messaging, and email, with occasional camera, social media, navigation, and airline app use. Not to start an iOS vs. Android debate, but I really liked the simplicity of Apple's core experience, especially the built-in mail client, and it seemed less crashy than my EVO 4G.

In order of what I use it for:
Email
Whatsapp/text
Music
Phone
Alarm
Weather
Calculator
Photos/camera
Shopping apps like Amazon
Banking
Calendar
Google
Entertainment like FB, Youtube, Twitter, etc
Home surveillance via an app
Turn off lights/open door/turn off heat using Smart Things/Nest apps
Remote control to digital tv box
Travel apps such as passbook, airline apps etc.

It is a multi-tool for me. Once I get apple pay, I'll be all set.
