I am still in the early stages of planning a trip to Nuremberg for the Christmas Mart and I have found that the Hilton offers smoking rooms. It is, however, a bit far from the city center (10 minutes by public transport).
Does anybody have recommendations for a hotel in the center which offers smoking rooms?

Holiday Inn City Center still has smoking rooms. Haven't been there in a long time, but just had a look at their web site to confirm.
Looking at the map, it appears to be a 10-12 minute walk from the Christkindelmarkt.
