The description "Singapore Noodles" is a little general. However it might not be authentically Singaporean. "Singapore Noodles" as found in a lot of Cantonese style Chinese restaurants in the US comes from either Hong Kong or the US, can't say which. It's panfried thin rice vermicelli noodles seasoned with lots of curry powder (to where the noodles are yellow in color), with thin sliced pork and shredded scrambled eggs.

Authentic Singapore noodles? It's Laksa, or Hokkien Mee, or Mee Pok, or Loh Mee, among others. Some combination of these four are typically available at any hawker center or kopi tiam in a shophouse.

Singapore noodles is something invented by the westerners and non-existent in Singapore. There isn't anything equivalent to it in Singapore.

How long are you here for?

Definitely try A1 and A3 at Penang Seafood. http://www.penangseafoodrestaurant.com.sg

^ You've captured it exactly! And yes, I've only seen it at Chinese and Vietnamese restaurants in USA.

With this knowledge I think I will stick to the hawker fare for my venture into "local" cuisine (and of course the restaurant recommendations in this thread).

There are two very unique Chinese based dishes:

Singapore Noodle, a concoction started in Hong Kong. I have never seen it in Singapore, most Singaporeans will not lower themselves to eating it.

Mee Hong Kong, a concoction started in Singapore. I have never seen it in Hong Kong, most Hongkongers will not lower themselves to eating it.

I'm considering the HIX in Katong area, are there any good seafood restaurant nearby for chili crab or should I go into city center stay near clarke quay for no signboard/jumbo?

Yes, No Signboard main branch in Geylang. Go there around 7.00 pm and enjoy the view

Yes, if you want the true authentic Singaporean cuisine, head to our Hawker centres. We're a melting pot of different cuisines and if you are a fan of noodles - try Char Kway Teow (fried black noodles with cockles), Mee Goreng (Malay fried yellow noodles with egg and tomatoes) or Minced Pork Noodle Soup/Dry (Chinese noodles served with fishballs, minced meat and fishcake).

No roast goose in Singapore due to our import regulations. Kam's the Roast Goose Specialist from Hong Kong has a branch in Singapore, but they don't sell roast goose here. Only Roast Duck.

Roast Duck - I like the original Kay Lee at McPherson, though admitably I have not visited them since they got bought over and sprung up all over the island.

I haven't been to SIN in a long time, so don't recall. I also don't recall seeing any live geese around HKG either, so not sure of the point.
