Would you mind noting with each menu the class of service, please? I think that it would be helpful. Thanks.

Champagne

“D” de Devaux Brut, Champagne Veuve Devaux, Frankreich
Like so many champagne houses, the house of Devaux, founded in 1846, also has to thank a widow for its success. The widow, Augusta Devaux, made the business a success in the second half of the 19th century, thereby bringing herself into the ranks of the famous champagne widows. This cuvee “D” ties in with the success of the great champagnes. It is a composition whose complex interaction of aromas is reminiscent of elder blossom, orange zest and fine, nutty notes. On the palate the freshness of the chardonnay knits perfectly with the fruit and opulence of the pinot noir. The widow would no doubt be proud to know that her champagne was the winner of the Lufthansa blind tasting.

or

“Rare”, Champagne Piper-Heidsieck, Frankreich
Régis Camus, the cellar master at Piper-Heidsieck, has brought together the best vineyards for the champagne grape varieties chardonnay and pinot noir in this pre-stige cuvee. The grapes from each vineyard are vinified separately in order to achieve a multi-faceted composition later. Chardonnay brings delicate floral notes, as well as a fresh minerality, to the cuvee, whilst pinot noir enhances the whole with its fruit, power and weight. Thus the “Rare” has an elegant palate structure and refreshing mousse.

Monthly Proposal

2004 Monte Mareto Countacc!, Michele Chiarlo, Italien
The name Piemonte means “at the foot of the mountains”. This region is a real paradise for foodies who also like their wine. Not only is the noble truffle found here but also fine wines. Whilst the search for truffles is often a matter of luck, a winemaker who has exactly the right touch, like Michele Chiarlo, can actually influence the quality of the wines himself. Chiarlo has totally committed himself to the wines of his homeland and has brought the wine culture of this hilly landscape, crowned with castles, into the 21st century. In 1982 he was the first winemaker to blend the indigenous barbera with other varieties in a cuvee. This experiment reached its apogee in 1995 with a new style of wine, the Monte Mareto Countacc!. This new cult wine was produced from barbera, cabernet sauvignon and shiraz, matured in French oak casks.
The 2004 vintage is a great example of this still young wine style. It is a wine with an intense, purple red colour with touches of violet and an almost black centre. The nose is a complex with concentrated fruit suggesting figs, sweet cherries and dark berry fruit, enhanced by a subtle oak spiciness as well as plenty of vanilla and toasty notes. On the palate this is a wine with good structure and intensity. It has a long finish with elegant oaky notes and considerable fruit. This is a wine with freshness and the potential to age.

Apéritif

Campari
A red mild bitters-type cordial

Sherry “La Guita”
A classic Sherry with fruity flavour and a taste of elegant saltiness, typical for Manzanilla Sherry.

Lufthansa Cocktail
This cocktail with aromas of juicy oranges, sweet almonds and fine berry fruits develops its full flavour when served chilled or “on the rocks” and can also be very refreshing if mixed with sparkling wine.

White Wine

2006 Hörsteiner Abtsberg, Riesling Spätlese trocken, Hofkeller Würzburg, Deutschland
Once upon a time Napoleon declared the Würzburg Residenz to be the most beautiful rectory in Europe, and not just because of the Baroque magnificence on top of the ground. Apparently the French King was also most impressed by the treasures lying in the cellar. Real treasures from these cellars still see the light of day, for example this Hörsteiner Abtsberg Riesling. This outstanding wine is a true delight not just on the ground but also up in the air as it is a classic Riesling with delightful, subtle apricot and peach fruit, elegant mineral notes and a powerful taste balanced by lively acidity.

2005 Riva Ranch Chardonnay, Wente Vineyards, USA
Arroyo Seco in Monterey is the ideal place to plant outstanding chardonnay. The deep gravel soils and cool growing season allow the grapes to ripen slowly, leading to a natural balance of flavour, sweetness and acidity in the resultant wine. The Wente family have grown chardonnay here since the Sixties and this wealth of experience is echoed in the complex character of this wine, which has impressive and marked toasty notes, touches of vanilla and caramel as well as aromas of pears and candied citrus fruit. This is a powerful, intense wine with good length and structure, which shows depth of flavour thanks to its elegant minerality.

2006 Rotgipfler Tradition, Thermenregion, Weingut Johanneshof, Österreich
The Rotgipfler from the Reinisch family has real character. This elegant wine was selected as one of the hundred best wines of the Thermenregion and is also a rare speciality. This very old grape variety, which is today found almost exclusively in the region south of Vienna, has an excellent reputation for producing aromatic and powerful wines. This Rotgipfler Tradition is no exception. Aromatic fruity notes suggesting peach and grape as well as notes of lemon grass characterise the bouquet and an elegant minerality completes the picture. On the palate the wine has a powerful character marked by full fruit flavors and a long aromatic finish.

Red Wine

2001 Château Croizet-Bages, Cru Classé, Pauillac, Frankreich
The wines from Pauillac are full-bodied. The terrior here is so outstanding that this commine can boast three Premier Crus Classés. Yet even here there are still discoveries to be made as huge quality strides have been made in the last few years, such as at Château Croizet-Bages. This is a medium-sized estate with around 30 ha of deep-seated gravel soils, planted to cabernet sauvignon, merlot and cabernet franc. The 2001 Château Croizet-Bages is a garnet-colored wine with a bouquet of ripe berry fruit, gentle spicy notes and a touch of bitter chocolate. On the palate it is structured with firm tannins as well as having sweetness of fruit.

2003 Grand Estates Shiraz, Columbia Crest, Washington, USA
The grapes for this cuvee come from the best vineyards in the Columbia Valley. In this instance grapes from the Horse Heaven Hills are responsible for the complexity of the wine, from the Wahluke Slope for the body and those from the Yakima Valley for the aromatic intensity. However, the true secret of this cuvee lies in the small percentage of white viognier grapes. These are fermented together with the red grapes, as is traditional in the Rhône. The subsequent maturation in French and American oak barriques gives the final polish. This is an opulent wine with intense berry fruit and aromas of black cherries as well as a touch of fine spice in the form of vanilla and a hint of caramel.

Dessert Wine

2006 Zweigelt & Pinot Noir Beerenauslese, Weingut Nittnaus, Österreich
When Christine and Hans Nittnaus dare to experiment, there does not seem to be a limit to the impossible, as this Beerenauslese made from red grapes shows. The Austrian “national grape” Zweigelt comes together with French Pinot Noir in this dessert wine with its delicate rosé color with glints of orange-red. The bouquet is extravagant with aromas of ripe raspberries and strawberry conserve, touches of mild spices and a touch of honey and citrus freshness and these aromas are repeated on the palate. This Beerenauslese is most pleasing with its elegant sweetness and restrained acidity.

Monthly Proposal

Nonino Grappa Lo Chardonnay Barrique, Italien
The Nonino family have made grappa acceptable in polite society. Although they have more than a century’s experience in the art of distillation, they only became famous in 1973 when Giannola and Benito Nonino revolutionised the method of producing grappa with their “invention” of the first varietal grappa, the cru monovitigno from the picolit grape. Since then their superb, top-class grappas have enjoyed success around the world. The 66 steam-driven copper stills, designed specially for the Nonino distillery, are also unique and ensure that the specially selected, fresh, still juicy grap marc can be distilled immediately during the grape harvest. The best grappas and grape brandies mature in the Nonino family’s four big cellars in Friuli in casks made of Limousin or Nevers oak, pear or wild cherry wood and even in old sherry casks. The mature grappas and grape brandies are bottled without any additions after a long, natural maturation period. The Grappa Monovitigno Lo Chardonnay Barrique is made of fresh chardonnay marc from the wine region Friuli. The bouquet suggest nutty notes of marc, mild spices and candied fruit as well as hints of vanilla and cocoa. This is a powerful and exquisite grappa with a long finish.

Champagnes and Wines

Champagnes

Dom Pérignon 1999
Few wines have achieved the mythical status of Cuvée Dom Pérignon. Moët et Chandon made their first Cuvée Dom Pérignon 70 years ago, a champagne that is always from the finest Grands Crus and always carries a vintage date. The 1999 is both fresh on the nose and full on the palate, a triumph of ethereal elegance.

Krug Grande Cuvee
Founded in Reims in 1843, the House of Krug is now managed by the 5th and 6th generations of the Krug family. Rigorous selection and care go into every detail of the “multi-vintage” Grand Cuvée, which offers a magical combination of aromatic complexity, power and finesse with a long, lingering finish. Krug is the ultimate experience in champagne.

White Wines

Cloudy Bay Sauvignon Blanc 2006 Marlborough
Cloudy Bay is the definitive New Zealand Sauvignon Blanc. Since its first vintage in 1986, Cloudy Bay has excited wine drinkers the world over with its racy freshness and zingy flavours. Made by winemaker Kevin Judd, this wine well deserves its cult status. Sauvignon Blanc is New Zealand’s most successful and distinctive wine style and has almost single-handedly established “the land of the long white cloud” on the international wine stage.

Meursault Les Clous 2005 Bouchard Pere et Fils
Meursault is one of the most famous of all white Burgundies and the Les Clous vineyard that is 47% owned by Bouchard Pere et Fils, lies just above the village’s top Premier Crus. Pale gold with green tints, with the classic Meursault aroma of white flowers and hazelnuts, this wine has ripe Chardonnay fruit on the palate, a hint of oak and a firm finish. 2005 was the best vintage in Burgundy for many years and the white wines are beautiful now.

Red Wines

Château Cos d’Estournel 1999 Saint-Estephe
With 65 hectares of superbly placed vineyards that adjoin those of Château Lafite-Rothschild in neighbouring Pauillac, Cos d’Estournel is one of Bordeaux’s most famous estates. The wine is known for its intense, slightly spicy Cabernet Sauvignon fruit blended with a high proportion of Merlot to provide richness and roundness. 1999 was a fine vintage for Bordeaux which is now showing its true quality.

Mr Riggs The Gaffer Shiraz 2005 McLaren Value, Australia
Mr Riggs also known as Ben, has been making wine in McLaren Vale for over 21 years. His Mr Riggs Shiraz is one of the most exciting in the region. It is rich, ripe and full bodied and despite being matured for 12 months in French Oak barrels has a fruit purity that fully expresses the region in which it was grown. The wine is named in honour of Ben’s great-great-great-grandfather who was known as The Gaffer, a colloquial term for the boss or foreman.

Port

Graham’s 20 Year Old Tawny Port Portugal
This magnificent port is made from wines of the very highest quality from Graham’s estates in the Douro region of northern Portugal. The black-red of the young wines takes on a light red/tawny colour, while the nose shows raisiny fruit with hints of orange peel and spice. On the palate it is rich and nutty, with a wonderful warmth of flavour and lingering aftertaste.

Champagnes and Wines

Champagnes

Charles Heidsieck
Of the three Champagne Houses based in the historic city of Reims that bear the name Heidsieck, Charles Heidsieck is the most famous, being the oldest and the largest and having coined the name “Champagne Charlie”. A perfect blend of the Chardonnay grape for elegance, Pinot Noir for body and a little Pinot Meunier for spiciness, this is a marvellously expressive Champagne, lively on the nose, biscuity and creamy on the palate with rounded, dry finish.

White Wines

Wild Rock “The Infamous Goose” Sauvignon Blanc 2006 Marlborough, New Zealand
The Marlborough region in New Zealand’s South Island produces some of the world’s most exciting and distinctive Sauvignon Blanc. The style is leafy, racy and highly distinctive. Wild Rock is a youthful modern wine company headed by highly respected viticulturalist and Master of Wine Steve Smith and winemaker Matt Murphy. By way of clarification Goose is the nickname of the man who grew the grapes.

[b]Wynns Coonawarra Estate Chardonnay 2006 South Australia
Australia has a reputation for rich and oaky Chardonnay. This stereotype has been challenged of late by the evolution of a new modern style of Chardonnay. These wines, generally grown in cooler regions, are better balanced with less overt oak and higher natural acidity. Wynns is such a wine. Made by Sue Hodder, one of Australia’s most respected female winemakes, Wynns was founded in 1891 and is synonymous with the Coonawarra region. Sealed in screw cap to eliminate cork taint.

Red Wines

Heartland Shiraz 2005
Shiraz is Australia’s most famous grape variety. Whilst the traditional style is well established, a new modern take on Shiraz has emerged focusing more on fruit purity than heavy oak ageing. Heartland Shiraz is such a wine. Heartland is a partnership of local wine identities with complimentary skills in viticulture, winemaking and marketing. The wines are made by cult winemaker Ben Glaetzer who was Young Winemaker of the Year in 2004. This vibrant red wine has great concentration and spice. The palate has a wonderful velvety texture and suppleness and successfully combines power with softness.

Chateau Fonreaud 2002 Listrac Medo
The splendid 18th century chateau of the Chanfreau family occupies the highest elevation in the Medoc and dominates the 42 hectares of gravel soil vineyards that are classified Cru Bourgeois Superieur, a ranking just below that of the world-famous Crus Classes. A fine Cabernet Sauvignon-Merlot blend, with just a touch of the spicy Petit Verdot grape, this is a classic Listrac : bright carmine colour, a hint of blackcurrants on the nose, velvety smooth on the palate with a balanced dry finish. The 2002 vintage is now at its best.

Elderton Shiraz 2004 Barossa Valley
The Barossa Valley is known internationally for classic “Aussie” Shiraz. These wines are rich and full-bodied with a characteristic soft finish and mocca flavours. Elderton is a small family owned company with an excellent reputation for its reds. This wine, made from old vines from the warmer valley floor, was aged in a mixture of American and French oak barrels and is a fine example of traditional Barossa Shiraz.

Port

Dow 2001 Late Bottled Vintage Port Portugal
A Late Bottled Vintage Port, usually shortened to LBV, is Port from a single, high quality vintage, bottled after four to five years spent maturing in large oak barrels, or “pipes” as they are known in the Douro. Deep ruby in colour, with all the spice, bramble fruit and concentration typical of a fine Port, and a warm, smooth sweetness of the finish, this LBV is one of the highest quality.
