Beverages

Champagne and Wine

Champagne

Charles Heidsieck Brut Reserve, Champagne, France
Charles Heidsieck regularly offers the deepest, the roundest and the most fascinating flavours of the well-known champagne producers in its non vintage wines. An unusually high percentage of mature wine - 40% - is blended in with younger wine to create the smoothest, most relaxing champagne available. Some of the mature reserve wine used for blending may be as much as 15 years old, and adds immeasurably to the nutty softness and the mellow savory elegance of the wine.

White

2016 Wairau River Sauvignon Blanc, Marlborough, New Zealand
Marlborough in New Zealand's South Island is home to many of the world's most exciting Sauvignon Blanc wines. Wairau River is highly regarded and was established in by Phil and Chris Rose in 1978. All their wines are made from family owned vineyards. This wine is classic Marlborough - fresh, vibrant and delicious with distinctive Sauvignon Blanc leafiness.

2015 Albert Bichot, Saint-Vieran, Macon, Burgundy, France
Albert Bichot is one of the top producers of Saint-Vieran and this 2015 is a wonderful example of the round, creamy, generous style of white wines that they produce from Chardonnay grapes planted on limestone rock. Enjoy the white floral, citrus nose which opens up to ripe yellow fruits, hazelnuts and spices. The finish is crisp, balanced and lingering, with a touch of minerality. For more and more people, white wines from Saint-Vieran and Pouilly-Fuisse, are increasingly becoming the go-to regions for delicious, friendly, medium-bodied whites from Burgundy. Best with salads and different types of seafood dishes, including stir-fried prawns, fish or scallops.

Red Wine

2012 Chateau Peyrabon Haut Medoc, Bordeaux, France
Chateau Peyrabon has always been a very serious wine, situated right next to the star-studded village of Pauillac. In fact, when the local producers organised their wines into the famous classification of 1855, Peyrabon's owner was so amazed to be left out that he sued the organizers! He didn't win, but taste the wine, and you can see his point. It's dark and ripe, laden with black fruit and with a mineral flavour like the rattling of vineyard stones. And in a gentle year like 2012, the wine allows itself to be a little juicier and softer than usual, without ever quite losing its earthy muscularity.

2015 Dandelion "Lioness of the McLaren Vale"Shiraz, McLaren Vale, Australia
Dandelion is an exciting partnership between renaissance wine man Zar Brooks, and his highly acclaimed winemaker wife Elena. The grapes for Lioness were sourced from Angus and Helen Tuck's vineyard in McLaren Vale. This wine was fermented traditionally in open fermenters, aged predominantly in older French oak barriques and was bottled without filtration. The result is a Gold Medal winning Shiraz from an exceptional vintage.

Port

Taylor's 10-Year-Old Tawny Port, Portugal
Founded in 1692 and still in family hands, Taylor's holds one of the largest reserves of oak-aged Port, wines that lose their dark red colour in the barrel to become "tawny" and gain a supple, spicy, nutty sweetness of flavor. The perfect accompaniment to cheese, this wine also pairs very well with chocolate desserts.

White

2015 Weinhaus Ress Kabinett Riesling, Rheingau, Germany
Weingut Ress was founded in 1870 by the Rheingau hotelier Balthasar Ress and this important German wine estate and today is run by Stefan and Christian Ress, who represent the fourth and fifith generations of the founding family. They are a quality producer specialising in Riesling - the great grape of Germany. This wine is classic Riesling with lemony aromatics combined with fresh zesty acidity and on off-dry finish. Delicious.

Best with salads and different types of seafood dishes, including stir-fried prawns, fish or scallops.

Red Wine

2014 Stonier Pinot Noir, Mornington Peninsula, Australia
The cool maritime climate of the Mornington Peninsula south of Melbourne is particularly well suited to growing top quality Pinot Noir. Stonier is one of the pioneers of the region and this wine, made by talented winemaker Mike Symons, shows all the bright fruit vibrancy of this exciting wine style. The wine pairs well with Asian meat and fish dishes.

2012 Chateau Siaurac, Lalande-de-Pomerol, Bordeaux, France
An enchanting place in Chateau Siaurac's vineyard is on top of a steep slope where the last vines run down to the little river Barbanne. Hardly 100 metres away, over the stream, vines rise up again as the great plateau of Pomeral spreads away to the south west, and in less than a kilometre one can see the fabled chateau of Gazin, La Fleur, and mighty Petrus. Siaurac doesn't have the sheer power of these wines, but it does share the lush fruit and spicy, mellow texture that makes Pomerol wines so irresistible. This 2012 is full of juicy blackcurrant and blackberry fruit, wrapped in warm spicy oak, with just enough chewiness to make your mouth water and your thoughts turn to which main course you are going to order.

OR

2012 Chateau Peyrabon Haut Medoc, Bordeaux, France
Chateau Peyrabon has always been a very serious wine, situated right next to the star-studded village of Pauillac. 2013 Marchesi de Frescobaldi Castello di Nipozzano "Nipozzano", Chianti Rufina Riserva, Tuscany, Italy
This charming Chianti is a wonderful example of the quality of red wine produced by the renown Frescobaldi family whose roots in the region date back 700 years. The wine is produced in a gorgeous, ancient castle called Nipozzano in the heart of Chianti Rufina. Nipozzano offers layers of cherry, blackcurrant and roasted herb flavors with velvety firm tannins. This is a generous, full-bodied red that is sophisticated and quite modern in style without being overly ripe. Enjoy this wonderfully balanced, supple wine to pair with a wide range of red meat dishes.

Delicious.

Champagne and Wine

Champagne

2006 Dom Perignon Brut, Champagne, France
The 2006 vintage continues the Dom Perignon tradition of being an exceptional wine from 100% Grand Cru vineyards. The wine is bright, airy and refreshing on the nose with a floral, fruity tone. On the palate, the wine is succulent with great flavour and has a long finish.

Krug 2004, Champagne, France
Krug is undisputedly one of Champagne's greatest Houses. Founded in 1843 Krug is seen by many connoisseurs and wine experts as the perfect expression of Champagne - combining power and intensity with nesse, palate length and balance. Krug famously includes a higher percentage of Pinot Meunier in their blends in addition to Chardonnay and Pinot Noir. Krug 2004 is a rare champagne of extraordinary quality. It effortlessly expresses the growing conditions of this exceptional year with complexity resulting from over 12 years of bottle maturation in ideal cellaring conditions.

White

2016 Dog Point Sauvignon Blanc, Marlborough, New Zealand
Dog Point achieved immediately cult status when first released in 2004. This was not surprising given the pedigree and experience of the founding partners. Viticulturist Ivan Sutherland and oenologist James Healy both held key roles at Cloudy Bay for over a decade before beginning their Dog Point collaboration. Dog Point is estate grown and boasts some of the region's finest vineyard sites.

2014 Maison Albert Bichot Chateau Long-Depaquit, Chablis Grand Cru Les Blanchots, Burgundy, France
This is exactly as a grand cru Chablis ought to be : taut, minerally, linear with subtle, focused layers of granite, oyster shells and dark seaweed. The fine line of acidity running through this wine as well as the precision and detail reveals its grand cru origins. Domaine Long-Depaquit, part of the Maison Albert Bichot portfolio, was founded in 1791 and consistently makes very good quality Chablis at all levels. The wine pairs well with most seafood dishes with a light seasoning.

Red Wine

2013 Henschke Keyneton Euphonium, Eden Valley, Australia
Henchske was established in 1888 and today, still in family hands, is one of Australia's oldest and most revered winemakers. Euphonium is a blend of Shiraz, Cabernet Sauvignon, Merlot with a splash of Cabernet Franc proving that with wine the sum is often greater than the parts. A fine and classic medium bodied red displaying typical Eden Valley elegance, spice and balance. A highly rated wine from a highly rated vintage.

2010 Louis Latour Chateau Corton-Grancey Grand Cru, Cote de Beaune, France
A vibrant red Burgundy that displays the charm and savory, earthy character of the Corton Grancey vineyard. This is an elegant red Burgundy that is very consistent year after year in offering sweet red berry flavours that are layered with bay leaf, thyme and an earthy finish. In this fantastic vintage, the Corton has more flesh and density than usual with a fine line of acidity running through it.

2007 Chateau Rauzan-Segla, Margaux, France
Classified as a "Second Growth" in 1855, second only to Chateau Margaux itself, the 51-hectare Rauzan-Segla estate has maintained this ranking across three centuries. Now under the meticulous ownership of the Wertheimer family, better known for their Chanel fashion brand, no effort is spared to make the best wine possible. 2007 is a lovely vintage with fragrance on the nose and fine texture on the palate, showing to perfection the depth and character from Rauzan-Segla's vineyards with the hallmark elegance of the Margaux appellation.

Port

Dow's 20 Year Old Port, Duoro, Portugal
With twenty years of cask aging, this Port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softed and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. A beautifully balanced Port that can be enjoyed on its own or with cheese or dessert.

Hapi Daze by Garage Project

A taste of New Zealand - Hapi Daze. The first craft beer on Singapore Airlines, borne from our focus on excellence. Craft beer is brewed by independent breweries, concentrating on quality, no quantity. The result is fuller, more exciting flavours. Hapi, the Maori word for hop, inspires this truly Pacific Pale Ale. Brewed with New Zealand barley and the best of the Kiwi hop harvest. A rich malt body with hints of tropical fruit flavours awaits. Bringing you the best in quality and flavours - it's just one of the lengths we go to. Garage Project is a small brewery based in an old petrol station in Wellington. The aim in the Garage is to push boundaries, reinterpret styles and challenge the notions of what beer can be.

OR

2013 Joseph Drouhin Rully Blanc, Burgundy, France
A refreshing, subtle white wine that shows the savory side of Chardonnay. The palate offers notes of white flowers, almonds and citrus with crisp acidity. A balanced white wine with all the elements seamlessly woven together. Perfect with light seafood, especially shellfish dishes.

Red Wine

2012 Chateau Siaurac, Lalande-de-Pomerol, Bordeaux, France
An enchanting place in Chateau Siaurac's vineyard is on top of a steep slope where the last vines run down to the little river Barbanne. Hardly 100 metres away, over the stream, vines rise up again as the great plateau of Pomerol spreads away to the south west, and in less than a kilometer one can see the fabled chateaux of Gazin, La Fleur, and mighty Petrus. Siaurac doesn't have the sheer power of those wines, but it does share the lush fruit and spicy, mellow texture that makes Pomerol wines so irresistable. This 2012 is full of juicy blackcurrant and blackberry fruit, wrapped in warm spicy oak, with just enough chewiness to make your mouth water and your thoughts turn to which main course you are going to order.
