The light show was great when it started, but 10/15 or so years on, it's very tired. And you're right - it looks very cheap and tacky, not 'expensive' at all.

For fine dining Chinese, I recommend Yan Toh Heen at InterCon or Man Wah at Mandarin Oriental. Restaurant Petrus for fine dining European if you fancy.

Aqua is good for a drink, but you may also want to check out Sevva on the Island side for the same (avoid ordering food).

I cant go wrong with the Grand Deluxe HV room.

To be fair the restaurants in the Pen aren't too bad, though I agree that there are other more interesting choices out there.

If you happen to visit on a Sunday, Sunday brunch at the Spoon by Alain Ducasse (at the InterCon) is worth giving ago.

Since you are in HK, you should take advantage of that by sampling some of the finest Cantonese Chinese cuisine (and make sure you do Dim Sum for lunch!)

Yong Kee in Central is one of my favorites - you cant visit HK and not try the infamous roast goose!
