Have your hotel book you a restaurant in Samchunggak called Yi Gung. They do royal Korean sets.

Had a multi-course traditional meal at this place some years ago. One of my in-laws, born and raised in Seoul, selected the place. I wish I could tell you I remember everything in detail, but I don't. I remember having gujeolpan (구절판), which is not exactly one of my favorite dishes, but a special occasion food. However they apparently do the royal cuisine thing, and you can see prices on their Web site.
