What options have you found so far? FlyerTalk is not a travel agency.

You can use EY miles for AA flights, however AA does not operate NYC-MEX direct.

I would compare the cash price for the following, and compare that to the value of the miles you're using:
Full itinerary
Open jaw returns
All one way tickets

If you're looking at revenue tickets, take a look at AM. They operate a 787's between US (LAX, I know of) - MEX. Your skyteam status *might* help (?) in upgrades?

NYC-MEX I'd be sure to price Mexican airline Interjet (link). LCC, but free 50 kg / 110 lb baggage, 34" seat pitch, etc. and often decent prices (believe there's a 30% summer sale on). Reliable. I have relatives that use Interjet all the time.

They don't fly to AUS, but they do fly MEX-SAT, and it's not that far to Austin.

JDiver that is a very valuable advice you gave me. I will for sure consider Interjet since redeeming Etihad points on AA sounds to be a real hassle.

Here are a couple of paid itineraries for you, not sure you will be able to beat that by piecing together one ways.
