Food Network's 12 Days of Cookies
I have enjoyed for the past couple of years the tradition that Food Network has with their 12 Days of Cookies.
I've made some delicious cookies from their recipes, as they tried to incorporate different cookies from other countries
Well, this is day 4, and they have only sent recipes from their star chefs. Which are completely uninspiring.
Today, it's Giada's Peppermint-Chocolate Sandwich Cookies
One of the ingredients is
1 (16.5 ounce) tube refrigerated sugar cookie dough
Which is OK, but I was expecting something much more interesting from Food Network, not recipes that you can find printed in the back of a package from the container in the refrigerated food section

I hear ya... at the same time, does simplify some of the prep work. ;-).
On another note, Keegan Gerhard opened up a little dessert shop/cafe here in Denver. It's gooood stuff, he has awesome cookies (other stuff too)!

I usually make these around the Holidays. They are super easy, taste good and are always a hit.
Cranberry, Orange and Dark Chocolate Chip Cookies
2 cups all purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cup butter, room temp
1 cup white sugar
1 large egg
zest of one orange (about 2 - 3 tablespoons)
1/2 cup dried cranberries
1/2 cup dark chocolate chips
Preheat oven to 350 degrees fahrenheit and line a couple of baking sheets with parchment paper (I use Silpat). In a medium bowl, whisk together flour, baking powder, baking soda and salt. In a large bowl, cream together the butter and the sugar, beating with an electric mixer until light. Beat in egg and orange zest. With the mixer on low speed, gradually add in the flour mixture, stirring only until just combined. Stir in the cranberries and chocolate chips.
Drop dough by rounded tablespoonfuls (about 1 1/4 inch balls) onto prepared cookie sheets and bake for 9 to 12 minutes (my oven takes about 10 minutes but every oven is different), until edges are very lightly browned. Cool for 3 to 4 minutes on baking sheet then transfer to a wire rack to cool completely. Makes about 4 dozen.
