For July, Priceline had a 3* for $150 a night, and the 4*s ran up to $229 a night.
You might do a little better via bidding. There weren't any Priceline Express offers.
Hotwire had a 4.5* for $187 a night.
You didn't specify your exact dates, so I just used random weeks in July.

How experienced are you with churning credit cards ?
When I venture into Manufactured Spending forum, there is a very STRONG warning not to do something like this as your first attempt.
It is very easy to get burned, so wade in slowly, at least that is my advice.
I suspect it can be done, but I for one would not try something like this without getting my feet wet first @:-)

It can be done with good credit.
A friend of mine claims not to have paid for a single flight in almost five years.
I've been wanting lifetime 1 MM status on on UA, so been flying a lot, though this year, I've only paid for one long distance flight to use GPUs while both of my trips to Europe are using miles.

How much exactly are you willing to spend on flight, accommodation etc
For example from
New York to Rarotonga, Cook Islands ($1200 return pp)
New York to Fiji ($1600 return pp)
If you could be more particular on the dates as well and things you may like to do like Beaches
