Check in times Avianca Business Class

Check in times Avianca Business Class
I am flying from SCL to BOG in business class on a lifemiles redemption.
The flight leaves at 6:50 am and the Avianca website says that minimum check in time is 3 hours for South American flights.
There is no different time listed for economy or business.
Does anybody know if this is correct. 3 hours seems a very long time to check in especially at 3:50 am but obviously I don't want to miss my flight.
Also this is one of eight flights I have booked on this redemption. My partner is vegetarian is there any way of requesting vegetarian food? I can't find any mention on the website and the various trip reviews suggest a choice typically between fish, chicken or beef.
