Here is my guide to the Keys:
<cut>

EXCELLENT post. ^ My wife and I drive down to KW three or four times a year and your recommendations are spot on. To add a few of my own:

Drink:
* The Porch - craft beer bar in an old house, right on Duval St.
* The Rum Barrel - mediocre food but they have just about every rum available. Ask for the "Rum Bible"
* The White Tarpon - a locals place at the end of Front St., it's a liquor store/deli/bar. They make the best Key Lime Pie martini on the island

Eat:
* The Six Toed Cat on Whitehead - excellent breakfast
* Sarabeth's - excellent breakfast
* Kojin Noodle Bar - An Asian fusion noodle bar. I'm a fan of their lamb curry ramen
* Fogarty's - We've never had a bad meal here

Stay:
We usually stay at Marrero's on Fleming St. and have never had a bad stay. Free continental breakfast and a happy hour with free drinks is included. It's supposedly "haunted". Warning: like several other guest houses in KW, the pool area is clothing optional. We always opt for clothing but other guests do not.

I will strongly recommend staying in a guest house over a corporate hotel (with the exception maybe of La Concha / Crowne Plaza), and this is coming from a points whore who usually goes out of his way to stay in a Hilton or HI property. For one thing, most of the corporate hotels are on the wrong side of the island. Mainly though the guesthouses are all unique, all nice, and you meet much more interesting people.

Do:
You got all of the good ones I can think of, except I will plug the Schooner Western Union as our favorite sunset cruise. It's the flagship of the State of Florida. They give you free beer, wine, and homemade conch chowder, and they usually do a short astronomy talk once it gets dark. It's not a party boat like some of the catamarans (i.e. Fury) but we like that. It's more laid back.

No...I did more googling. It's the Half Shell Raw Bar on Key West. I knew it was by the water, it's the one!! Also has license plates on the walls.

Yup, a really nice bar just off the mayhem of Duval.

OP might also the legendary Happy Hour at Alonzos.

Key West night life was amusing to say the least. It's like a grown-ups' Spring Break.

If you really want to be amused, head up to the Garden of Eden! That place is very... unique.

No, I did more googling; it was the Half Shell Raw Bar on the water, somewhere in Key West. Kitschy in a good way, quintessential Key West experience. I had the chowder which was delicious, and it's a bit of a hole in the wall, but that's what we wanted.. spring break on a college budget yeah!!
