I visited Green Valley Spa in March 2006. I found the setting stunning, but then I love the topography of southern Utah. (Amangiri is on my list of places to visit sooner rather than later).
GVS seems to go through changes all the time - in focus, in food offerings, in packages. Back then it was all inclusive; now I think you can do it totally a la carte as well. The food was the most dreadful part - very short meal hours (like 12-1 for lunch) that cut into other activities. There were only one or two choices at every meal, and they were the kind that give spa cuisine a bad name. There were also some weird policies about deposits. I think the staff are pretty much local young people. I did like the spa treatments I had, but there weren't very many offerings and the spa area was quite small. I seem to also recall the the spa shares part of the property with a family hotel so there were children around. As I said, though, because things seem to change so often, my experience four years ago might not be at all reflective of what it is like today. As they say, mileage may vary!
I wouldn't go back in any case.

If you are a return guest, my experience is that Canyon Ranch will negotiate in return for some sort of ongoing commitment -- at least in the current economic environment. The savings can be material. Difficult to generalize about how material since it seems like each situation is handled individually. Given the significant amounts involved, this should not be surprising.
I think both Canyon Ranch and Miraval are Virtuoso, this might save you a bit on a single stay. Also occasionally Canyon Ranch shows up with special offers on the Amex site.

Red Mountain Resort & Spa
Thanks for the info guys. Anyone know anything about Red Mountain Resort & Spa? I just saw a deal on Jetsetter for $245 a night. Seems to inlcude 3 meals a day plus all fitness activities.

Do check-out Mii Amo. I had minor complaints, but overall wonderful good, lodging, serene, beautiful setting, lots of classes, and on and on.
