Interesting.
There's long been speculation that easyJet will try something similar when they eventually consolidate all their Gatwick flights in one terminal (the North terminal), a move now expected to happen in January 2017. However I think the easyJet idea is only about transfers between their own flights - the Ryanair trial is looking to a possible future of transfers to and from other airlines.

...which could mean, depending on the route frequencies, the next day. Though, depending on the reason for the initial delay, compensation may be in order.
Or would Ryanair dare to rebook onto other airlines? That'd be fun: Flying a legacy on a 4.99 euro Ryanair ticket..

The policy on baggage charges would be interesting. Will they charge for each leg or treat EDI-STN-XXX as a single leg for charging purposes?
