Go shopping, sit at the pool, watch construction workers get on with it.

Have you done any planning/research yourself, or just booked a trip to Dubai having no idea what you're going to do there?

I'd assume the latter.

On my 2-day layover:

I took an abra across the river and wandered through the various souks to get a feel for the "old" part of town. I also visited the Jumeirah Mosque for their "open house" to learn a bit more about the culture.

A visit the Dubai Mall followed, just to see how big it was, and then I went up the Burj Khalifa - how can you not visit the tallest building in the world while you're there (reservations required, possible well in advance)? Finally, a desert safari/sand dune-bashing trip - as long as you don't get carsick.

The age of the kids would determine how much any of this is applicable.

Skiing is there at the other mall, but it seemed like an expensive, time-consuming novelty.

Reposting what I posted in similar thread for your benefit:

Depending on the age:
Dubai Mall has plenty including the aquarium, ice skating, the fountains, candylicious, and other places.
Emirates mall has ski dubai and other choices.
Mirdaf has ifly dubai indoor sky diving
Stargate is a decent little amusement park
Wild Wadi water park
Atlantis has the aquarium and water park

Expand to Abu Dhabi and add the Ferrari amusement park and the formula one track.
