Cabo suggestions?
Thinking about spending about a week in the Cabo San Luca area this coming December to relax and celebrate my GF's birthday. We're in good shape (for what some of the younger FTers may consider our advanced ages!) and enjoy seeing historical and cultural sites, but this trip would be primarily to escape the New England winter and relax. We're looking for suggestions for places to stay/eat, things to do ... you name it. (We speak rudimentary Spanish. This will be our second trip to Mexico. We're looking for something a bit more private and laid-back than a major resort.)

When I was in PVR (see my "if you are in puerto vallarta..." post)
I went on a jeep safari through Vallarta Adventures. Our tour guide (who is in charge of the jeep safari expedition) mentioned he was recently in Cabo setting up Cabo Adventures there.
He said their Jeep Safair/Desert Safari excursion was awesome. I know I had fun on my excursion in PV. Also, many people have said the canopy tour was awesome... though this is the one in PV, Cabo also has their own.
Its a great company if you are looking for adventure. If you do check it out, let me know how it went!

Todos Santos is always nice and there are a couple properties on the water, but a week may be a bit too long there. We've stayed at the Sheraton Hacienda Del Mar and enjoyed it quite a bit. It never seemed crowded, especially on the beach. We like having a car to go to town (or up to TS). We are returning in December, but will be staying on the Sea of Cortez, approx. 1 1/2 hour north of the airport.

If you decide that you are going to stay in the San Jose del Cabo side (as opposed to Cabo San Lucas), PM me & I will give you some restaurant suggestions. Unfortunatley a lot of the places down there are now going "all-inclusive" which means meals are provided. i like trying out different places to eat & not being stuck eating in the hotel every night.
I can no longer reccomend my usual hotel as I had a bad experience there a few months ago but we talked to several people who stayed at the Royal Solaris (San Jose side) and loved it.

My wife and I had a wonderful stay at the Casa del Mar in Cabo last year, I would highly recommend it. It's in the "corridor" between Cabo San Lucas and San Jose del Cabo.

Thanks to those who have posted here - but, thanks to a mistake fare widely discussed on FT, we're not going. Our winter vacation will be in New Zealand! (We're keeping Cabo in mind for a year later, though.)

I understand the roads are nice to Todos Santos and also understand if doing a day trip to go early as the galleries close around 4pm, How far a drive is Todos Santos from San Jose del Cabo or Cabo San Lucas ?
Are there any other towns/locations/sights that one might drive to from the San Jose/Cabo area ?

The airport is about half an hour from San Jose del Cabo. We recommend taking the toll road. From the end of the toll road, it's about another half an hour another along the corridor of hotels on the beach, on a paved but scary traffic road, to Cabo.
From Cabo itself it's about another hour to Todos Santos. Easy road, paved, two lane, some spectacular views.
Cows are all free range there and wander on to the roads at will. Also, everyone drives like a lunatic. Get the insurance if you want to rent a car. And don't drive at night.
We just came back from a trip to the East Cape, La Ribera and Los Barriles. Let me see if I can put some links together. We rented a jeep and went prepared to go on dirt roads and offroad, but you can get to Los Barriles on the Highway.
