No blackout dates? Except for one night stays
I'm trying to book a Saturday night in December - no availability , either paid or with points. However, change the dates to Fri/Sat or Sat/Sun and there is availability. Go figure
Worse, it's not just one rogue property, but is the same for 3 different brands in the same city.

Such minimum stay requirements are common and used for yield management, throughout all hotels and hotel chains. Since it doesn't apply to award stays only, I wouldn't refer to it as "reward blackout dates".
Sounds like there's an event in the city you are referring to.
However, you could try to make a reservation for two nights, then change it online to one night - that trick worked for me in most cases (works with paid stays only, you need to call to change award nights).
