I know I'm against the mainstream on this topic, but this is a straightforward connection in CDG 2E-2F, which is absolutely painless and fast, if you have status or fly biz. While AMS in general terms is the better airport, I did not like the last time when connecting to DL in AMS that I had to pass through security again coming from within Schengen, this does not happen in CDG.

I will echo the group and say AMS.. I am not a fan of CDG at all.

one more vote for "not a fan of CDG" EXCEPT:

if you have a full day layover then spending a few hours in Paris is always a treat. You can take a bus or train into the city and it drops you off right in the center of it all.
As much as I like Amsterdam, it seems like a small town when compared to Paris.

The other exception would be that there are probably more options for CDG-VCE than AMS-VCE so if you miss your connection it may be easier to find a replacement flight.

If your layover is less than 10-12 hours and connections are not an issue there is no doubt that connecting in AMS is much smoother.
