Foie Gras, pate, etc
Not sure where to post this but -
I love foie gras - try not to think about the health consequences - anyway have ordered from D'artangan (www.dartagnan.com) before and been happy with their service. I had been looking forward to visiting their restaurant when next in NY - but apparently it has closed. Just notified that they are offering a 15% discount (code taxbreak) this week I think until the 17th. If you haven't ordered before join the Muskateers club- no charge and you get a free gift with first order. I have no interest in the store other than being quite happy with their products and service and would like to share the discount with whoever would like it. They also have game meats, other specialty stuff |

Thanks for the link. Since I'm doing low carb and I'm depressed about all the activest types trying to shut down the only two domestic foie gras producers,

Yes, but if you order more than $250 (used to be 200 :( ) no shipping charge. Even though they say you can't freeze foie gras - I usually order a lot at one time and have been quite happy with mine after it has been frozen. I have frozen some of their pates, mousses, etc and had a great gift to bring when suddenly invited to dinner or instant snack with unexpected guests.
I also bought some game meats (I'm generally not a red meat eater) but buffalo, ostrich is nice for a change so I got over the shipping charge :o |

Speaking of Fois Gras, my wife and I just spent a wonderful evening at Trio in Evanston celebrating our 12th wedding anniversary. Enjoyed the Tour de Force 16 courses w/wine pairings, a 4.5 hour meal. I’ll write up sometime in the Chicago forum. Anywho, the presentation at Trio was the following: Moulard Duck Foie Gras w/blueberries, cinnamon tapioca, sorrel. The presentation was served in a clear glass tube. The mousse of foie gras “plugged” one end, the cinnamon tapioca the other. We lifted/tilted the tube, put one end to our mouth and then sucked the whole tube’s worth into our mouth. Silky, luxurious foie gras mousse w/the other components. Wow! Terrific! :) |

But what about the foie gras there? There are some excellent foie gras producers in Argentina, making very small quantities of exquisite quality product. The stuff is expensive, with prices similar to what you would pay in France for comparable quality material. If you can get away from the perceived value bubble associated to product labeling and dare to to a blind taste, you will be pleasantly surprised. One of the producers is Cabanias del Fin del Mundo, another is associated to Ahumaderos Familia Weiss... and there are a couple of others I need to dig up for you. The best stuff is made in the region of Patagonia, although there is one producer in the province of Buenos Aires that makes heavenly stuff. |
For those who want to eat foie gras, confit etc but don't want to pay Fauchon prices, there is a very nice small restaurant in the Rue Blanche (9ème). Forgot the name, but was there yesterday. They have their own production in the Périgord, serve all their specialties in the restaurant and sell their products at shop prices. A wonderful coffret (wooden box) with foie gras, mousse de foie gras and duck, confit d'oie costs € 42.-.
The restaurant is easy to find: go to Place Blanche and walk down the Rue Blanche. About half way down on the left handside. You can't miss it, the products are in the window. You do not go there for the luxury but for what you get onto your plate. |
