Foie Gras, pate, etc

Not sure where to post this but -

I love foie gras - try not to think about the health consequences - anyway have ordered from D'artangan (www.dartagnan.com) before and been happy with their service. I had been looking forward to visiting their restaurant when next in NY - but apparently it has closed.

Just notified that they are offering a 15% discount (code taxbreak) this week I think until the 17th. If you haven't ordered before join the Muskateers club- no charge and you get a free gift with first order.

I have no interest in the store other than being quite happy with their products and service and would like to share the discount with whoever would like it.

They also have game meats, other specialty stuff

Guess I should buy some before foie gras becomes obsolete

Thanks for the link. Since I'm doing low carb and I'm depressed about all the activest types trying to shut down the only two domestic foie gras producers,
I'm on my way to see their offerings now.

Great stuff, but $25 s/h per order.

estnet Apr 17, 2004 10:38 pm

Yes, but if you order more than $250 (used to be 200 :( ) no shipping charge. Even though they say you can't freeze foie gras - I usually order a lot at one time and have been quite happy with mine after it has been frozen. I have frozen some of their pates, mousses, etc and had a great gift to bring when suddenly invited to dinner or instant snack with unexpected guests.

I also bought some game meats (I'm generally not a red meat eater) but buffalo, ostrich is nice for a change so I got over the shipping charge :o

I like their stuff too, have ordered from them before, thanks for the heads up.

Speaking of Fois Gras, my wife and I just spent a wonderful evening at Trio in Evanston celebrating our 12th wedding anniversary. Enjoyed the Tour de Force 16 courses w/wine pairings, a 4.5 hour meal. I’ll write up sometime in the Chicago forum.

Anywho, the presentation at Trio was the following: Moulard Duck Foie Gras w/blueberries, cinnamon tapioca, sorrel.

The presentation was served in a clear glass tube. The mousse of foie gras “plugged” one end, the cinnamon tapioca the other.

We lifted/tilted the tube, put one end to our mouth and then sucked the whole tube’s worth into our mouth.

Silky, luxurious foie gras mousse w/the other components.

Wow! Terrific! :)

Congratulations, Willie! However, I can't believe that this wasn't posted first as a mini Chicago do! ;)

BTW, going to Paris in June for the French Open. I could make a "run" to Fauchon!

Excellent question, thank you for asking.

There are some excellent foie gras producers in Argentina, making very small quantities of exquisite quality product. The stuff is expensive, with prices similar to what you would pay in France for comparable quality material. If you can get away from the perceived value bubble associated to product labeling and dare to to a blind taste, you will be pleasantly surprised.

One of the producers is Cabanias del Fin del Mundo, another is associated to Ahumaderos Familia Weiss... and there are a couple of others I need to dig up for you. The best stuff is made in the region of Patagonia, although there is one producer in the province of Buenos Aires that makes heavenly stuff.

For those who want to eat foie gras, confit etc but don't want to pay Fauchon prices, there is a very nice small restaurant in the Rue Blanche (9ème). Forgot the name, but was there yesterday. They have their own production in the Périgord, serve all their specialties in the restaurant and sell their products at shop prices. A wonderful coffret (wooden box) with foie gras, mousse de foie gras and duck, confit d'oie costs € 42.-.

The restaurant is easy to find: go to Place Blanche and walk down the Rue Blanche. About half way down on the left handside. You can't miss it, the products are in the window. You do not go there for the luxury but for what you get onto your plate.

Magexpect-

thanks - I'd like to try it next time I'm in Paris ;) do you happen to know the nearest Metro stop?

magexpect May 1, 2004 11:40 pm

Station Blanche and then walk down the Rue Blanche, the restaurant will be on the left
or
Station Trinité and walk up the Rue Blanche, the restaurant will be on the right.

Bon appétit

Have any home chefs here made a torchon?

I've got 3/4lb of foie gras "scraps" and intend to make a torchon for the first time.
Any recipe you followed or tips would be appreciated.

Fwa Gra is now "legal" again in California. Sort of. It has to come from out of state. Great time for luxury restaurants in California to serve this again :o

Wow- I had tried ordering from D'artagnan a while ago and they couldn't ship to CA but they can now!!!!

I saw the recent court case overturning that part of the law. For now.

did you order???
i love foie gras but am now eschewing it for cholesterol management. Fun while it lasted.

I loved it at Au Cheval in Chicago - served with a really great (probably homemade) strawberry jam and thick Texas toast.

No haven't ordered yet (same health concerns) but called them and they verified they can ship to Ca. If I can control myself (to only eat a little) I may order some though. I still have some fat left (frozen) from when I cooked it before - it is great in small quantities for frying instead of butter (like fried egg) or used to saute onions - adds a whole new flavor dimension ;)

Coincidentally Facebook memories had my picture from Au Cheval in 2013

That is an excellent idea, wish I had thought of it!

Legal to eat, but not legal to sell, so restaurants can't serve it.

From Eater Los Angeles:

Foie gras, the fattened liver of duck or goose, is no longer illegal to have in California, as long as the product is comes from an out-of-state seller and is transported by a third party, according to a ruling from a federal judge today, reports the Associated Press.

Update: the ruling determines that, “Of course, once the foie gras reaches California, it cannot be resold within the state,” which seems to imply that restaurants would not be allowed to sell foie gras on their menus, despite earlier reporting that it was allowed. California Attorney General Xavier Becerra’s office is reviewing the ruling.
And the San Francisco Chronicle:

The ruling doesn’t change the stakes in restaurants: California businesses still can’t sell foie gras. Chefs also can’t give it away as a free “gift,” according to a 2019 ruling against Napa restaurant La Toque, a major proponent of the fatty liver.

Can't they "give" it away with some expensive entrees?

Please refer to my edited post. This question was addressed by the judge in his 2019 ruling.
