Favourite Recipes with Beer
 
In meat cookery, for example, beer is a classic ingredient. Used in place of water as the simmering liquid, it brings out all the richness of the meat and vegetables. The alcohol evaporates in the cooking, leaving only the delicate flavors to intrigue the diner.

I often use beer as the cooking liquid when making mussels. Never used it as a marinade, will have to try that one.

par boil brats in beer

make Fogaritas (beer margarita, very good!)

beer batter fish fry or onion rings

sometimes par boil ribs in beer before putting them on the grill, YUM

I've heard about an entree called beer can chicken, but I'm not sure what it is.

I've had this, we call it "beer up the butt" chicken

basically you use a full beer can (opened of course) as a vertical roaster, either in the oven or on the grill. As the chicken cooks the beer steams the chicken keeping it moist and delicious.
