Yes we let it go to 135* bc some of the fam like it medium rather than medium rare. Teenager was in charge! Next time may need to cut the rack in half to please everyone. Nevertheless we all were gnawing on the bones as we sipped wine and chatted as the sun set late.
That thermometer is my favorite kitchen gadget. Called the MEATER. It’s worth every penny of the $70, perfection every time. And yes I got the rack at Costco. I want to get several more but they don’t always have it. Asparagus came from Kroger. I agree the fat ones are so much better. Tossed some Penzeys Chicago steak seasoning on them and grilled in the lamb juice. We use those grill sheets and I must say they are a favorite household item now. I am craving duck now. Need to see if I can acquire from Costco or Whole Foods. I think this time of year you will find the lamb racks often at Costco. And Costco does have frozen duck...mine did a few weeks ago. Gnawing on the bones---I can't eat lamb chops around my brother-in-law because he won't pick them up and eat all the meat on there!! It makes me crazy...he will cut off with a knife and fork and eat and there is tons of really good meat on those little suckers. Now I really want some lamb chops even though I just had them last week (sans asparagus which I still can't find that is decent--normally I would go to 5 different stores but not now) but they are quite the delicacy. |
I bought a 22"off-brand charcoal grill today to add to my parent's gas grill. They were pushing me to get a smoker, but after having a WSM for a decade, I did not think it was worth the trouble and I wasn't going to spend the $$$ for a ceramic (I think I would've gotten a Primo with its oval grate , or a Komodo Joe or Big Green Egg).

Living in a semi-rural region of Southern Ontario delivery is not available. Take-out is possible if we want to drive into town but it's just as easy to cook at home. The more I'm cooking the more I'm convinced that there isn't anything I can buy that I can't make equally as well except for sushi. Going out for a burger would be a serious step down.
I also thought that I could grill burgers and let them go out for the fries. we ended up getting sushi carry out last night. $147 incl tip. Super yummy and I really cannot cook those sushi dishes. |

The recipe is straight out of The Joy of Cooking with 2 minor modifications. I added a half cup of honey to the boil water and didn’t have the corn meal on hand so didn’t use it. They were ready to come out of the oven at 15 minutes. The topping is from a jar called “Everything but the bagel”. Hopefully this is readable.

I am csufabel and I am officially a meat hoarder.
This morning I went out to one of my discount markets and they had USDA Prime grade beef briskets for 2/$60 or one for $45, but while I was there, they said they needed the freezer space and marked them down to $20/each. I bought two and I have no room for either of them. I went there for precooked bacon packages (30-35 slots for $6), and Skinny Pop popcorn for them by the case. I may get beef ribs tomorrow too. My folks refuse to cook, so they want the bacon regardless of social distancing and they really don't like sides I prepare. I guess they are used to years of the overly salty rice/pasta box mixes. While the both love carbs, I made baked polenta for them, and while they often ordered grits at a restaurant, polenta was BIG a miss. I put parm and feta in it too and they love them some cheeses. |

EDIT:I pre-ordered short ribs for pickup tomorrow Here's one of them I have to thaw out, https://cimg6.ibsrv.net/gimg/www.fly...04e0ae054e.png |
Wow!
We're moving out of New York for at least a few months and I just bought a new outdoor refrigerator for the garage to store the 30+lbs of meat/fish we have in the freezer right now. Gotta worry about the essentials, ya know? |

Yep.
We order meat once a quarter usually and it's a large amount. That along with fish that I catch. It adds up pretty fast. Our freezer is always full. |

Didn't I reply to you last week that I would send you brisket, either good or poorly smoked? Well, when I start the first smoke, I'll PM you.

That looks like one glorious piece of meat! I just had to but the briskets...and I need to buy a rib loin tomorrow for $50 too to cut it up for strip streaks. $hit, they are selling two, cut-up chickens (aka 16 pieces) for $5, While leaving for college over 25 years ago, I think I'm actually glad I returned to Tampa...for meat prices. Then again, my Mom has been here for 40 years, with navigation, still gets lost here and doesn't know the area. |
Those are good prices. I’m impressed.
I’ve never been to Grocery Outlet - how is their meat? |

I didn't shop there regularly pre-Covid, instead my wife and I considered a visit akin to a fun treasure hunt. Have good friends who semi-regularly shopping at Grocery Outlet but the couple nicknamed it "The Used Food Store", because sometimes they will come across some bargain that is so inexpensive, that the food must be "Used". |

Generally fine, but can be inconsistent. It is inherent in their business model that wholesale suppliers can and will change regularly.

Well. I got two of these today and a larger choice brisket last week. I know in the freezer I have a vacuum sealed tri-tip, pork but, and pork spare ribs and baby backs.

gaobest, I lived in Contra Costa County from 2006-18. Grocery Outlet is fantastic for canned, frozen, and shelf stable goods plus wines. The circulars are out every Wednesday as a whole, but you can also get on an email list owards the stores closest to you. Plus, stores are independently own and operated. Most really don't have a fresh meat section worth a damn
|
I should have mentioned that I went to the grocery outlet in sf in the 90s before that space became the sf Best Buy.

I just made scones. They're not the best shape as I don't have a gizmo that does that but, they're light and should be fluffy. Once theyve cooked down sufficiently, I think my wife and daughter will go to town on them.

congrats on the scones. I’ve only done them from a mix. Were yours plain or spiced/fruited? |
We made pretzels today with teens. The finished product looked nothing like pretzels, but they were gobbled up in minutes. Also made gluten free choc chip cookies with a little cream cheese for softness and to minimize the grittiness of GF flour. They are excellent.

big yay on your yeast. I never once imagined that I would have 3-plus pounds of active dry yeast. https://www.maangchi.com/recipe/bread-rolls |

the buns are still so good. Thank you LapLap for the link. Another mom mentioned to me on FB that her family loves the Maangchi site! |
Tried something I've eaten over a thousand times but never cooked myself. Grilled with a little smoked garlic seasoning. Sauce on the side at the table. Wellington SPA to accompany.

but now I’m wondering HOW to make the rolls with chocolate chips so that the rolls would be chocolate rolls. Is it possible? Would I add chocolate chips to the dough after it’s risen? I did see on Maangchi that someone adds sausage to them. THIS IS SO EXCITING!!!!!!! |
