Raw vegetables?
 
Don't know if this is weird (my wife thinks so) but I have tremendous cravings for raw green beans. I love those big crunchy pods. Cook them and I have no interest. I also prefer raw carrots, spinach, peas, and mushrooms, none of which I'm particularly fond of when cooked, and I will even eat raw potatoes also. Anybody else have similar tastes, or is it indeed odd? I think it's a texture thing

If I must eat vegetables, I far, far, far prefer them raw. I can't think of a single cooked vegetable that I like. I can at least tolerate many raw ones.

I like vegetables, period. But yes, I'll eat most of them raw, including green beans ... especially freshly picked ones. My preference though is very lightly steamed ... just enough so they turn bright green, but are still crunchy/raw inside. And raw mushrooms on my salad ...mmm!

As for cooked, roasting or grilling for most veggies.

I enjoy most veggies raw or very lightly cooked (potatoes are an exception tho!) I like the flavour, and I like the crunch.

Potatoes and Brussels sprouts get cooked. Most others go raw (or close to it).

For example, tonight I will have raw onions on my perfectly grilled cheeseburger! :D

I love raw green beans! Much better than cooked. Also snow pea pods. I can just snack on them plain.

Generally either raw or cooked, depending on my mood and how they're prepared, are fine.

TBS, foods I want cooked include: potatoes, squash and gourds, beans, corn, rhubarb, artichokes, beets, eggplant and okra.

I think that's it - flavor and crunch. Eating raw potatoes was something I did when I was younger - probably would cook those now though. I've also gotten into the habit of cutting raw fennel as a substitute for onion on certain things, like hamburgers say.

When wandering thru the corn fields, we would pick an ear and eat (some of it) raw. Same with green beans from the garden.

The only vegetable I find inedible in its raw state is potato. On the whole I prefer all my vegetables lightly cooked. Not crunchy but still with a bite.

Depends on the vegetable. I eat a whole load of raw vegetables most days (usually carrot, romano pepper, cucumber, spring onion, fennel), and love munching on some of the less conventional ones for raw consumption (brussels sprout, turnip, etc) but there are some which benefit from the application of fire. A griddle pan can do wonderful things to asparagus, cauliflower, chillis, and even baby leeks.

Really fresh vegetables are wonderful when eaten raw. Less fresh vegetables not so much. Cooking seems to be a leveller.

Also a personal early summer favourite, minus the pods...Salted radishes, possibly dipped in melted butter have great taste too.

I don't like garlic, cooked or raw. I've heard you either have the garlic gene or you don't. As for onions, I certainly eat them raw on my hamburgers, in salads, etc., but not by themselves.

My dad always liked turnips when we were little but I hated the taste of them. I never had a raw one, though. I think I'm going to give them a shot next.

I'm with you on that. Celery is just one of those vegetables that doesn't appeal to me, unless it's dipped in peanut butter for some reason.

Just had an entire package of sugar snaps for an afternoon snack. Yum

I'm about the opposite, I love steamed veggies. I love that it just melts in your mouth when you bite onto it. The only thing I eat raw is fish, just about obsessed with raw fish (ate it everyday for about 6 months then realized I could die from mercury poisoning, lol).

@lancebanyon, I use to eat celery with Nutella, was great. 100 calories per stick, break down: 110 cal for Nutella, -10 for the celery stick ;)

for some reason i'm afraid of eating green beans raw. as a kid my parents warned me to never eat string beans raw because the ends were poisonous but for some reason that fear has carried over to anything string bean like..

I basically eat a large (full meal size) salad every day. Nothing better than picking raw veggies from the garden. Picked tomatoes today!

Tonights dinner was a salad of thinly sliced raw heirloom zucchini with some good olive oil, lemon juice, parmasean, salt, pepper, fresh basil, and topped with chopped almonds. Super simple and a favorite when the local zucchini are in season. Yum.

I'll eat raw carrots all day long. There's something so enjoyable about that crack and pop when you bite a crisp, wet carrot. Mmm I want a handful right now.

That's because it is garbage. :)

The notion that carrots improve eyesight comes from World War II. Unbeknownst to the Germans, the British had invented radar and could see the Luftwaffe coming. To keep the secret of radar, the British press started reporting that the RAF pilots could see the Luftwaffe in the dark because British pilots ate lots of carrots, and carrots were good for eyesight.

Agree that I like raw vegetables much better than cooked. I'm guilty of often eating raw snap peas, celery, broccoli, etc. as a snack or breakfast. I believe that I have read that supposedly raw is healthier for most vegetables - don't remember exactly why though.

With turnips, like so many other foods, the end result depends entirely on the method you use. Boiled turnips are an abomination. However, roast them with cinnamon and freshly ground cloves and they become a totally different thing.

Cinnamon seems to make everything taste better. I was served a piece of ham on a charcuterie plate recently that tasted of cinnamon (jambon a la cannelle). Great unexpected combination.

Back on topic, I would never have thought about preparing turnips with cinnamon, nor is it an idea that would have ever seen the light of my day at my dinner table growing up. Sounds great though and I just may give it a try.

Still, olive oil, vinegar and lemon do wonders on those veggies, maybe with some herbs added.

Lately I've been disciplining myself to eat more raw vegetables as its slightly more nutritious than cooked vegetables, and takes more energy to digest.

Celery, cucumber, carrots, cauliflower and broccoli are my go to raw vegetables. I try to limit the dip that I use, as Ranch dip is quite fattening.

For ham, the sauce I make is brown sugar, good quality mustard, cinnamon, cloves and frozen OJ concentrate.

Peel 'em, quarter 'em, 350F for about 45 minutes, or however long the rest of whatever is in the oven takes. Depending on your dinner guests' palate, maybe a little butter and brown sugar on them, sugar really optional.
