That's because it is garbage. :)

The notion that carrots improve eyesight comes from World War II. Unbeknownst to the Germans, the British had invented radar and could see the Luftwaffe coming. To keep the secret of radar, the British press started reporting that the RAF pilots could see the Luftwaffe in the dark because British pilots ate lots of carrots, and carrots were good for eyesight.

Agree that I like raw vegetables much better than cooked. I'm guilty of often eating raw snap peas, celery, broccoli, etc. as a snack or breakfast. I believe that I have read that supposedly raw is healthier for most vegetables - don't remember exactly why though.

With turnips, like so many other foods, the end result depends entirely on the method you use. Boiled turnips are an abomination. However, roast them with cinnamon and freshly ground cloves and they become a totally different thing.

Cinnamon seems to make everything taste better. I was served a piece of ham on a charcuterie plate recently that tasted of cinnamon (jambon a la cannelle). Great unexpected combination.

Back on topic, I would never have thought about preparing turnips with cinnamon, nor is it an idea that would have ever seen the light of my day at my dinner table growing up. Sounds great though and I just may give it a try.

Still, olive oil, vinegar and lemon do wonders on those veggies, maybe with some herbs added.

i can understand carrots and mushrooms but everything else has to be cooked for me

Lately I've been disciplining myself to eat more raw vegetables as its slightly more nutritious than cooked vegetables, and takes more energy to digest.

Celery, cucumber, carrots, cauliflower and broccoli are my go to raw vegetables. I try to limit the dip that I use, as Ranch dip is quite fattening.

For ham, the sauce I make is brown sugar, good quality mustard, cinnamon, cloves and frozen OJ concentrate.

Peel 'em, quarter 'em, 350F for about 45 minutes, or however long the rest of whatever is in the oven takes. Depending on your dinner guests' palate, maybe a little butter and brown sugar on them, sugar really optional.

Kale is my favorite vegetable. Lately I've been marinating it in lime juice overnight (sometime adding other ingredients to the marinade). Makes them even better. I think that I will experiment with marinating other raw veggies.
And grow a bigger garden next year!

Eating raw vegetables is suppose to be better. Cooked vegetables loses some of its high nutrient quality.. steamed veggies loses some of its juices.

Raw vegetables has the stomach work harder to digest. Same concept as eating grape fruit. All opinions I've heard.
