And ceramic knifes will shatter under hard impact (don't smash that clove of garlic using your knife!), extreme temperature change (don't cut that hot roast and then dip the knife in ice water for a cleaner slice), and no matter how careful you are they will eventually chip. Making for a limited life; of course that is great for their manufacturers, you buy new knives every few years. While the Solingen steel knives last for centuries and are family heirlooms.

After reading this thread I bought Mrs. Scubadiver two Global paring knives. One to replace the Sabatier I broke in an underwater pumpkin carving contest, and the other because it looked cool.

They arrived yesterday. She tried them and is ecstatic. Tonight I get a recipe from the Morimoto cookbook that requires heavy use of a paring knife.

Yes, it was a self-serving present.;)

As someone who cooks for a living I have the luxury of having coworkers who use a whole range of brands, sizes, and materials. For those that don't have that luxury go into Williams- Sonoma and play with their knives, just do not buy them there. Find something you like and then go to either Korin.com or Knifemerchant.com. They both carry western and japanese knives. My personal favorites are my 270mm carbon slicer, my 6" poultry knife and my 8" bread slicer, all made by masahiro.

About five years ago I got a set of Henckel knifes as a xmas gift for my husband for about $90. They were already marked down and I had a 25% off coupon plus it was the last set and on display without a box so they gave me another discount for not having the original box anymore. They're still as sharp as the day I bought them, no staining and they've been through a heck of a lot of abuse. My husband is not a gentle giant in the kitchen.
