Hi

I'm new to this forum and could not resist sharing the way to great pepperd bacon!

Buy your favorite thick sliced bacon and put it on a rimmed baking sheet. Grind fresh black pepper over the slices and bake the bacon until about 50% done. Drain, add some more pepper and store in a zip lock bag in the freezer. When you are ready to use the bacon about 40-60 seconds in the microwave and it's ready!

I sent my mom and dad some from Father's Country Hams. They said it was good (I sent a couple other varieties in addition to the peppered kind) but I don't remember how much it cost now as it was a year or two ago.

Locally, it is with all the other bacon. IT is usually on a shelf higher than the "regular" bacon.

you guys reporting to see it at your supermarket are likely thinking of regular or "think-cut" bacon. THis stuff is very different from Slab bacon which is like 3 times as thick as what you can buy in most supermarkets. if you have been to peter lugars and got the bacon appetizer, thats slab bacon, just not peppered. The butcher at the A&P in jersey city actually used to sell slab bacon, but hasnt in the last 6 months unfortunately. that was always a treat to throw on the grill at a bbq! i will have to get over to Fire and Oak and try this.

What I get is almost identical to the picture the OP posted and asked about.... do not believe he was asking about "slab" bacon....

didnt see the picture. Yea thats not slab bacon and can usually be found in a grocery store.


On another note, pan frying bacon with crushed red peppers adds an amazing zest and spice to bacon. Give it a try!

I love bacon, and one of the wonderful things about bacon is the broad variety of cures available. Peppered bacon would not normally be my first choice but it is a very nice change of pace especially since applewood-smoked became so uniquitous (don't get me wrong, it's great stuff, but it's not the perfect bacon for every occasion.)
