I will throw out some thoughts here. There are so many options; I highly recommend finding a good travel advisor. I ask a lot of questions including,
Age, what you enjoy doing, favorite travel experience, favorite hotel. What kind of food you like, budget, hobbies, travel date, length of cruise etc.

Having said that, if you have the budget, I would recommend looking at Silversea. They do a great job with inclusivity and don't charge double for single rooms.
