7:00pm: Claypot dinner - claypot is a cooking style using clay earthenware cooking pots. It is a local favourite in the winter. Famous is the lamb/goat/mutton stew as well as rice cooked in the pot with toppings. It is meant to add warmth to the cold winter days. Rice cooked in claypots will absorb the flavour of the topping as well as a crispy crust at the bottom.
For the adventurous snake soup is another winter delicacy.

Looks like I will be in for mostly the evening activities.
I have been to Lantau and done NP360 in the past (well worth going to!!), but if possible, I'd love to join for dinner en route to Happy Valley. If that gets tricky to coordinate, I am fine with just meeting up at the track.
On Thursday, seems like there is consensus for an excursion to Macau (also cool), but I will have jumped the gun and just come back from there, so again, meeting up in the evening for hot pot seems like the plan for me. I am more than happy to check out some microbrews while I wait for the crew to return ... and if in the end no one makes it back in time for dinner at least I'll be well situated to drown my loneliness.
Any suggestions on a traveller's SIM card? I know if I were flying to SIN first there's one I could get that would cover a good portion of Asia for 10 days, but starting in TPE or even HKG I am not sure if there is the same thing on offer.

For SIM card I will be on Google Fi so I am covered there. Not sure on other options.

I'm definitely in for claypot on the 15th; Horse races and predinner on the 16th; and day trip to Macau on the 17th, and hotpot dinner back in Hong Kong that night.

I won't be doing the Macao trip so I am game to do microbrew with anyone who is interested before hot potting.

If everyone wants to be there for the first race we can do dinner afterwards. Just need to leave before the last race or it gets pretty crowded exiting. There are many afternoon tea options to get a bit of quick food before the first race nearby.

I arrive into HKG on the afternoon of 1/15 departing on the 10:55 am Scoot flight to SIN on 1/18. Staying in SIN 1/18 - 1/20. Sorting out accommodations now... Count me in for all events.

Yes line is shorter and you get the glass floor which give you some interesting drone like aerial views.

These are crossing by ferries only.
For those who wants to try the bus crossing you need to DIY the trip. There is another post about the bus crossing on the bridge.
