How flexible?
I used to use my miles many times before but I never once changed the dates once I redeemed them. I've been trying to call my agent but she seems to be away at the moment. I've also been reading around on asiamiles but haven't found this info, I'm sure there's there but I'm just too blind to see. Anyway, I'd like to know if it's possible to change the dates once you redeem for the tickets? My miles are expiring at the end of this month so I need to book something soon. I can't decide on the exact dates yet though.

Date changes are possible once ticket are issued.
You only cannot extend the expiry dates - which are one year from DATE OF ISSUE on Asiamiles award tickets.

Thanks! I'll be using Bangkok - Hong Kong returned on CX. Now that I made up my mind on when to go, it's all up to whether my Saipan - Hong Kong flight on Continental will be delayed or not...I only have 1.30 hours in between.

You should be ok. But best for you to advise CX that you are connecting in from CO. They can then put a remark on your PNR and should you be delayed, CX will take care of things...
