I need to a make a flight to New York to personally pick up something, sign some legal stuff, etc.
I have found it's quite a bit cheaper to fly from PVG-JFK/EWR vs booking directly from HKG-JFK/EWR.
I have a flight that's flying from HKG to PVG I plan to just not fly, so I don't have to fly from HKG-PVG only to fly right back to HKG immediately to fly to New York.
If I book the PVG-HKG-EWR/JFK-HKG-PVG flight, can I somehow get them to void the first segment after booking without canceling my whole ticket? Of course to save money I am willing to do the roundtrip in Shanghai, but I want to avoid it.

No it's not possible. And the reason is exactly your scenario - since it's cheaper to originate the ticket from PVG, they don't want HKG people to buy tickets that originate in PVG and throw away the first sector.
As you're now using electronic tickets, you can't just 'throw away' your first sector of your ticket. If you do not show up for your flight as booked, your entire ticket is unusable and all remaining sectors effectively cancelled and your ticket will also be nonrefundable.
If you want to save money.. then book on another carrier and originate from HK.

I don't think any airline would let you do that..most of the times its cheaper to do the same thing you are trying to do and airlines exactly don't want you to do that. Hence they strictly enforce the rule of no-show for first segment..lose everything !!

I think the ticketing office in Shanghai (PVG) still issues paper tickets. @:-)

Even paper tickets won't change the outcome. They musts till be used in their entirety and in the order issued. You can, of course, pull the paper ticket for the segment in question, but that doesn't change what each carrier's records show.
