Amuse Bouche

Is back in F class ex HKG from February 2014.

A tuna tartare with mango salsa served in a Japanese plum wine glass is served on the ground with your choice of aperitif.

After a 7-8 years absence a much welcome feature back!

jona970318 Feb 9, 2014 4:25 pm

Sounds like a good news, looking forward to trying it out!!

Absolutely very welcome. Always liked it ten years ago.
Sure it is not perfect as it does not correspond to special meal orders (like no fish) but then there are always nuts :)
Great thing!
Anyway today I found F quite undercatered for 8 pax -- some choices ran out.

I forgot all about that! I remember having it on the A-340's JFK-HKG back in the day....when they had the "wedgie" seats in J  but...I digress...

Sounds good! I wonder when they'll introduce it network wide.. I assume this would apply to both long haul and regional flights in F?

had it today and it was delicious!

not only out of HKG -- received it in europe yesterday morning.

Is this only for F? Or are they planning on expanding it to J?

QRC3288 Feb 9, 2014 9:08 pm

awesome news...thx for reporting (and it seems like more than one destination, sweet), looking forward. Glad to hear positive improvements to F. Hopefully they didn't hack more out of the wine budget to make it happen. Did the FAs know anything more about it? Say it was a limited time thing or permanent enhancement? Usually they get color on service enhancements in a regular booklet that CX hands out multiple times a year to staff (aka, what it the enhancement is, how it is to be prepared, when to be served, who gets priority if applicable, etc), sometimes it says inside if it's a limited offering or not. Would be curious if anyone has seen that booklet. Sometimes CX offers color as to why they're doing such and such enhancement as well (occasionally it references pax feedback, or crew suggestions, etc.).

To jona970318, I haven't flown on CX long enough to be around when I guess this existed (in F) 7-8 years ago, but I would expect that's an F thing only. Conceptually, I think of amuse bouche as part of a higher-end dining experience, and CX J certainly is not that;). However, if it means CX has loosened the purse strings on catering that'd be awesome...I do recall maybe 3-4 years ago CX had an olive/gherkin(?) offering that came with the nuts in J class during drinks, and am I remembering properly there also were some sun-dried tomatoes in olive oil? Was that CX? The olives/gherkins were definitely nixed at least a few years back (and so were the sun dried tomatoes if my memory is serving me right), presumably a victim of cost cutting I haven't seen those in a while. I wouldn't mind seeing a return of the olives in J, I'm not a huge fan of the nuts and thought they were a nice addition. Theoretically I suppose an amuse bouche could work in J if it was small enough and they served it around with the pre-flight drinks, but I'm not counting on it.

CX used to serve canapés in J class as part of the first drink service. This stopped around 2005ish

Glad it is offered outport as the crew told me it is ex hkg only.

Also in F class the following changes noted:

Pesto or sundries tomato bread spread are offered
A continental breakfast option is offered when u order 1 hour before landing. So they must had issues offering the full breakfast menu. Officially It used to be 45 minutes before landing you can still order the whole menu

I think if you ordered special meal, a special amuse Bouche will be delivered - which was the case before.

Just had it yesterday as well on 749 to JNB, tuna and mango. Served pre-takeoff, really nice and light and tasty. Goes well with Krug ;)

I think CX stopped serving amuse bouche in F in 2006. I couldn't find a pic of it in my 2006 HKG-LHR F photos archive.

This is the amuse bouche on HKG-FRA in F in 2005:

They stopped it when they introduce the new F class I recall.
