My software automatically resizes for e-mail or web export as desired. For example, I've edited 200+ images (in full resolution) from my last trip. I'm going to publish them all to my website (appropriately resized) with pretty much one mouseclick.

How much does each bit of resolution weigh, given the same camera?

Part of my rationale is that I primarily shoot wildlife and action. I'm not going to ever find myself in the position of fiddling with in-camera size and quality settings while a shot gets away. I lose enough of them without the added help.

There is a place in the workflow for image size and quality adjustments. That place should not be in the camera.

Edit to add: One thing I learned on my last trip is that photographers for National Geographic are not allowed to throw any of their images away. They all go to the editor. . .
What software do you use?

I agree I would always rather get the shot than fiddle with changing settings, but for me, that's not a choice I usually have to make. If I'm shooting at a plce or an event, I'll pick resolution settings at the beginning of what I'm shooting and leave it, so generally speaking, I rarely change settings once I get started with a location.
