Allow me to clarify a bit.

The incineration/proper disposal of the trash is not a Gate Gourmet decision per se...it is a FAA or TSA (FDA??) rule. Nor is the stuff "toxic waste" created by Gate Gourmet, it is foodstuffs that originate overseas that must be sterilized due to concerns about any kind of foreign plant/bacteria/insect/whatever to take hold stateside.

As far as the menu choices and such...I believe that most, if not all the food selections are left to the individual carriers. The other thing you need to take into account regarding taste is the sheer amount of time the food must remain "fresh" and "good tasting" before it reaches your mouth. I am by no means a champion of airline food...but I do have a great deal more respect for how complicated and difficult it is to deliver even the simplest of snacks at 35,000 feet.

Most of the kitchens are 24 hour operations. Especially the larger international hubs...
