With your points, if you really want something memorable, I tend to agree with DJ_Iceman and would suggest looking at some of the RCs around the world. The wife and I recently stayed at the Cayman Island RC and it was a truly memorable experience. The RC on St. Thomas is also supposed to be one of the nicest resorts in the Caribbean. Singapore has a spectacular RC and while the RC is not on a beach, there is definitely some great sites and culture to see.
